Param Chach Buttermilk -Traditional Thandai

Ingredients:

•    1 liter milk (full cream) 
•    2 tbsp almonds 
•    1 tbsp cashews 
•    1 tbsp pistachios 
•    1 tbsp melon seeds (magaz) 
•    1 tbsp poppy seeds (khus khus) 
•    4–5 green cardamom pods 
•    1 tsp fennel seeds (saunf) 
•    5–6 black peppercorns 
•    1–2 tbsp rose petals (dried or fresh) 
•    4–5 tbsp sugar (adjust to taste) 
•    Few strands of saffron (optional) 
•    1 tbsp rose water 

Instructions:

Step 1: Soak the dry fruits
Soak almonds, cashews, pistachios, melon seeds, and poppy seeds in water for 4–5 hours (or overnight).

Step 2: Make paste
Peel the almonds and grind all soaked ingredients with cardamom, fennel seeds, black pepper, and rose petals into a smooth paste.

Step 3: Prepare milk
Boil the milk and let it cool slightly. Add sugar and mix well.

Step 4: Mix everything
Add the prepared paste into the milk. Stir properly so everything blends nicely.

Step 5: Add flavors
Add saffron and rose water for extra aroma and taste.

Step 6: Chill & serve
Refrigerate for 2–3 hours. Serve chilled, garnished with chopped dry fruits

Tips:

•    Thicker consistency ke liye paste zyada use karo 
•    Aur refreshing taste ke liye thoda ice add kar sakte ho 
•    Special occasions par isme thoda Bhang bhi add kiya jata hai (optional)
