👩🍳 How to Make Paneer Jhol
Step 1: Prepare the Paneer
Cut Param Dairy Paneer into medium-sized cubes. Lightly sauté the paneer in a little ghee until slightly golden. Keep aside.
Step 2: Fry the Potatoes
Heat ghee in a pan. Add the potato cubes, a pinch of turmeric and salt. Fry until lightly golden, then remove and keep aside.
Step 3: Prepare the Masala
In the same pan, add cumin seeds and bay leaf. Add chopped onion, if using, and sauté until translucent. Add ginger paste and chopped tomatoes. Cook until the tomatoes soften.
Step 4: Add the Spices
Add turmeric, cumin powder, coriander powder, red chilli powder and salt. Cook for 2–3 minutes, adding a splash of water if needed.
Step 5: Make the Jhol
Add the fried potatoes and water. Cover and simmer for 10–12 minutes, or until the potatoes are cooked through.
Step 6: Add the Paneer
Gently add the sautéed paneer and simmer for another 3–4 minutes so it absorbs the flavour of the curry.
Step 7: Finish and Serve
Sprinkle garam masala and fresh coriander. Serve hot with steamed rice or Bengali-style basmati rice.
