Milk Cake is a traditional Indian sweet made from milk, sugar, and a hint of cardamom. It has a grainy texture and rich caramelized flavor.
Ingredients:
• 1 liter full cream milk
• ½ cup sugar (adjust to taste)
• 2 tablespoons lemon juice or vinegar
• 3–4 green cardamom pods (crushed)
• 1 tablespoon ghee
• Chopped pistachios or almonds (for garnish)
Instructions:
• Boil the milk
• Pour milk into a heavy-bottom pan and bring it to a boil on medium heat.
• Curdle the milk
• Add lemon juice slowly while stirring. The milk will curdle (separate into chenna and whey).
• Cook the mixture
• Continue cooking on low-medium heat. Keep stirring so it doesn’t stick to the pan.
• Add sugar and flavor
• Add sugar and crushed cardamom. Mix well. The mixture will start thickening and turn slightly brown.
• Cook until thick
• Cook until the mixture becomes thick and leaves the sides of the pan. Add a little ghee for richness.
• Set the milk cake
• Transfer the mixture to a greased tray or plate. Spread evenly.
• Cool and cut
• Let it cool completely, then cut into square pieces.

• Tastes best after a few hours when properly set
