Rabri Recipe (Indian Sweet Dish)


Rabri is a rich, creamy dessert made by slowly thickening milk and adding sugar, cardamom, and dry fruits. It’s popular during festivals and special occasions.


Ingredients:


•    1 liter full cream milk
•    4–5 tablespoons sugar (adjust to taste)
•    4–5 green cardamom pods (crushed)
•    10–12 almonds (chopped)
•    10–12 pistachios (chopped)
•    A few strands of saffron (optional)
•    1 teaspoon rose water (optional)

 Instructions:


•    Boil the milk
•    Pour the milk into a heavy-bottom pan and bring it to a boil over medium heat.
•    Simmer and stir
•    Once it starts boiling, reduce the heat to low. Let it simmer and keep stirring occasionally.
•    Scrape the cream (malai) that forms on the sides and mix it back into the milk.
•    Reduce the milk
•    Continue cooking for about 30–40 minutes until the milk reduces to half and becomes thick.
•    Add sugar and flavor
•    Add sugar, crushed cardamom, and saffron. Mix well.
•    Add dry fruits
•    Add chopped almonds and pistachios. Cook for another 5–10 minutes.
•    Cool and serve

Turn off the heat and let it cool. You can refrigerate it and serve chilled.

Serving Suggestion:


Rabri tastes amazing when served with jalebi, malpua, or gulab jamun. It can be enjoyed both warm and chilled.

 Tips:
•    Always use full cream milk for a rich texture
•    Cook on low heat for the best flavour
•    Keep stirring to prevent burning
